Quick and Easy Cauliflower Rice  with Spinach

I love this quote! When you find a remedy, or a solution, to a problem, rather than pointing fingers, making excuses, or blaming, you create your own luck! That’s one of the reasons why I love this quote so mucho!

I say it a bit differently but the meaning to me is the same.

“Don’t blame or make excuses for your problem, find a solution.”

That’s exactly what I did for myself a week or so ago when I was in a big hurry to make dinner yet wanted to still make something healthy and delicious. So, I found a remedy, or a solution, for my problem.

I created this Cauliflower Rice recipe with Spinach in minutes. Sooooo delicious and super healthy for you!

Getting Creative in a Pinch

I was fortunate enough to have a bag of chopped cauliflower from Costco but if I hadn’t, I could have easily taken my cauliflower and tossed it into the food processor or chopped it up by hand (the way I used to do it before my food processor years ago).

I had been practicing my Essentrics routine and working on my website all day and just didn’t have the time or energy to spend on making dinner. So this is when you get real creative haha!

This is How You Do It!

Ingredients:

2 cups Cauliflower (chopped into rice size pieces or purchased)
1/4 cup filtered water
2 cups organic spinach
2 cloves of organic garlic (diced) or garlic powder
Salt (to taste)
Pepper (to taste)
Cayenne pepper

Instructions

Put cauliflower and rice in a covered pot on medium heat until cauliflower is softened (about 10 -15 minutes). Stir in garlic and season with salt and pepper (to taste). Stir in spinach until wilted (turns a beautiful bright green and happens very quickly). Serve right away and garnish with cayenne pepper.

Super Quick, very healthy and super easy!

See how easy that is? And how quick? If you have frozen veggies you can toss those in along with the cauliflower as well and add any spices you like. If you eat meat, toss some chicken, or even salmon, of that on top as well. You can make a really pretty platter out of this by adding organic tomato slices or wedges and sliced avocado. The creativity for this dish is endless!
